I can't help myself it's just that time of year, time for yummy, warm, delicious desserts and here is the recipe for another one of my families favourites for chilly winter nights.
Sticky Date Pudding
1 cup SR flour
half cup brown sugar
2 eggs
50g butter
half cup water
1 cup of whole dried dates
splash of vanilla extract
1 tsp bicarb soda.
* Mix sugar and butter in your mixer till soft and creamy.
* Add eggs one at a time, mixing in well.
* Now add the flour while mixer is on a slow speed.
* In a small pot bring the water and vanilla to the boil
* Add the dates, leave for 2 mins giving dates time to soften.
* Now add the bicarb to the water and date mixture before adding it all to the batter in your mixer.
* Cook in a loaf tin, square dish or muffin tray on 160c for roughly 15 mins, time will vary depending on tray used.
Now the caramel sauce.....
2 TBS of brown sugar
1 TBS butter
2 TBS cream
*put all sauce ingredients into a small pot ad mix over a mild heat till it just starts to boil then remove from heat.
We like to serve ours with Connoisseur caramel, honey & macadamia ice cream. YUM!

Easy "lime/lemon/peach/coconut/anything really" cake
This is the easiest cake recipe and the best part is not only is it deliciously moreish and moist but you can add just about any flavour you like to it! It is just as lovely with coffee for afternoon tea as it is warm and served with custard for dessert.
My kids love lime, so today it's lime & coconut cake for us, why don't you give it a go.
1 cup SR flour
half cup caster sugar
half cup of plain vanilla yoghurt
2 eggs
splash of vanilla
1 TBS melted butter
& here's the fun part, add which ever you like, here are some ideas:
juice and rind of
1 lemon
or
1 lime
or
1 orange
or
half cup of chopped tinned peaches
or
half a cup of choc chips
or
half a cup of coconut.
*now melt the butter and set aside.
*mix flour, sugar, eggs, yoghurt and vanilla together either by hand or with a mixer.
*stir in the melted butter.
*add your flavour of choice and fold gently.
*cook on 150c in a loaf tin for around 40 mins or until golden brown.

Happy Easter
Easter always makes me think of my Dad more than usual, he was the 'Easter Bunny' for my whole family, he would wake up early (before the real Easter Bunny) and tip toe around to all our houses and leave us a trail of eggs along with a special egg hand picked, just for us, the last Easter we had with him he left Ethan a bunny on a motorbike, Lily got a special bunny he hunted down with no preservatives so as not to upset her eczema and for me, a chocolate wombat as a long running joke and an egg of the highest quality he could find knowing what a chocolate snob I am, I'm sure he chose it out of love not to rib me! then a gain he was a bit of a joker :)


My Dad wasn't into Christmas much but Easter was his day and this is our second Easter without him. So enjoy your family and I wish you all a happy and most importantly, safe Easter.
